Coriander-Cumin
Powder (Dhana-Jiru)
Coriander and cumin are used to make a masala (spice mixture) that is
the foundation for most Indian cuisine, and they are the main ingredients
in curry powder.
Ingredients
1⁄2 lb (250 g) coriander seeds, ground into powder 2
1⁄2 lb (50 g) cumin seeds, ground into powder
Coriander and cumin are readily available in grocery stores. For simplicity,
purchase them as powder, but for the best flavor, start with the whole
seeds. Dry roast the seeds together in a pan on the stovetop on medium
heat for 5 minutes or until lightly browned, and grind into a powder in
a coffee grinder. Store in a jar in a cool, dark place or in the refrigerator.
